Brickstone Bed and Breakfast Joins Chamber

BROKEN BOW—A home away from home, the Brickstone Bed and Breakfast joined the Broken Bow Chamber of Commerce on Tuesday afternoon. A ribbon cutting took place next to the newly renovated pool area, complete with a diving board and a patio, fire pit, and hot tub outside.

Cathy and Dave Minnick purchased the brick house at 152 South E Street back in 2007 and raised their combined family of seven children in the home. The Rose B&B used to operate out of the home and featured rose carpet, which remains in the elevator at the Brickstone today. After years of people asking if the Minnicks would continue the B&B tradition, the couple decided to go into the business.

Cathy Minnick said only one of the kids still lives at home and that the 7,000 square-foot house was starting to feel empty after the others graduated from school and moved out. When they come home to visit, Cathy said she gives them the family discount!

“People have asked us since we moved in here if we were going to do a bed and breakfast. And I always said no, no, no I don’t want to do that but then our rooms were empty and our kids were gone and it got pretty intriguing for me to do it so I’m pretty excited about it,” Cathy Minnick said.

After raising her and Dave’s children, Cathy said she was used to cooking, cleaning, and making the beds. She provides homemade treats for B&B guests such as warm cookies and fresh cinnamon rolls. She and Dave have enjoyed welcoming out-of-town guests who visit Broken Bow for weddings, Junk Jaunt, and many other occasions. The couple can decide when to allow guests to stay and Cathy says “we’re as busy as we want to be.”

Three guest bedrooms are available on the upper level and feature queen beds, robes, a basket of amenities, toiletries, TV, WiFi, homemade pretzels, and breakfast. Dave said portions of the original structure were built in 1910 and have since been expanded and/or renovated. Before opening the new B&B during the last year, Cathy and Dave said the renovation project included expanding the kitchen, redoing the flooring, adding fireplaces, and updating the pool.

The https://brickstonebnb.com website also allows guests the option of booking the entire upstairs for their stay. Past guests have written on the website that the Brickstone is “warm and welcoming” and Dave and Cathy serve as “friendly and accommodating” hosts.

Senator Matt Williams attended Tuesday’s ribbon cutting and open house and said the B&B is a great addition to the community. Congratulations to the Brickstone Bed & Breakfast!
